If you’re craving a classic comfort food that still fits a keto lifestyle, this Keto Meatloaf hits the spot. It’s tender, flavorful, and topped with a rich, slightly sweet glaze that caramelizes beautifully in the oven. Using a blend of beef and pork keeps it extra juicy, while pork rinds replace breadcrumbs without sacrificing texture or flavor.
This is one of those reliable dinners the whole family loves — and it makes great leftovers, too.

Ingredients
For the Meatloaf
- 1 lb ground beef
- ½ lb ground pork
- 1 cup panko pork rinds (or blended pork rinds)
- 2 tsp of dried parsley
- ¼ cup keto ketchup
- 2 eggs, beaten
- 1 medium onion, grated or very finely chopped
- 1 clove garlic, minced (or ½ tsp minced garlic)
- 1 Tbsp Worcestershire sauce
- 1½ tsp salt
- ½ tsp black pepper
For the Glaze
- ½ cup keto ketchup
- 4 tsp Swerve brown sugar
- 2 tsp Worcestershire sauce
Instructions
- Preheat your oven to 350°F. Grease a loaf pan (this is the easiest method) or line a baking sheet with parchment paper.
- In a large mixing bowl, add the ground beef, ground pork, pork rinds, ¼ cup keto ketchup, eggs, onion, garlic, 1 Tbsp Worcestershire sauce, salt, and pepper. Mix gently with your hands until everything is well incorporated — be careful not to overmix.
- Transfer the meat mixture to the prepared loaf pan, or shape it into an oval on the parchment-lined baking sheet. Place in the oven and bake for 30 minutes.
- While the meatloaf cooks, mix together the ½ cup keto ketchup, Swerve brown sugar, and 2 tsp Worcestershire sauce to make the glaze.
- After 30 minutes, remove the meatloaf from the oven and spread the glaze evenly over the top. Return it to the oven and continue cooking for 25–35 minutes, or until the internal temperature reaches 160°F and the glaze is bubbly and caramelized.
- Let the meatloaf rest for at least 10 minutes before slicing and serving. This helps it hold together and keeps it juicy.

Notes & Tips
- Extra glaze lover? This recipe reflects that. If you prefer less glaze, feel free to cut the glaze ingredients in half.
- Grating the onion instead of chopping keeps the meatloaf moist and helps it blend seamlessly.
- Pork rinds work best when finely crushed — a food processor makes this quick and easy.
- This meatloaf reheats beautifully and tastes even better the next day.
