If you’ve ever missed mashed potatoes since going low-carb or keto… this recipe is about to become your new best friend.
This Creamy Garlic Cauliflower Mash is rich, buttery, fluffy, and unbelievably comforting — and it honestly tastes better than traditional mashed potatoes. It’s made with real ingredients, no weird fillers, and comes together so easily that it’s perfect for busy weeknights or holiday dinners.
It pairs beautifully with Keto Gravy, roasts, meatloaf, chicken, turkey, and all your cozy winter meals — especially here in the U.P of Michigan when you want something warm and comforting without the carb crash.

Ingredients
- 1 large head cauliflower, chopped or 4 bags of frozen cauliflower
- 3 cloves garlic, smashed
- 3 Tbsp butter
- 3 oz cream cheese
- ¼ cup full-fat sour cream
- ½–¾ tsp sea salt (to taste)
- ¼ tsp black pepper
- ¼ tsp onion powder
Instructions
- Add chopped cauliflower and smashed garlic to a large pot.
- Cover with water and bring to a boil.
- Boil for 12–15 minutes, until very soft.
- Drain very well and let it steam dry for 2–3 minutes (this prevents watery mash).
- Add butter, cream cheese, sour cream, salt, and pepper.
- Mash with a potato masher or blend with an immersion blender until smooth and fluffy.
- Taste and adjust salt as needed. Serve warm and enjoy!

These mashed cauliflower make a great base for simple dinners like my Keto Meatloaf.
Notes and Tips
- Steam-drying is key. Letting the cauliflower release extra moisture before mashing makes it thick, fluffy, and never watery.
- Frozen Cauliflower: Follow the steps above the same for frozen cauliflower or you can prepare in bag following the instructions on the bag.
- Gravy: Never forget the gravy! Gravy elevates this dish to a whole other level. Check out my Keto Gravy Recipe!
- These creamy garlic mashed cauliflower are perfect served under my Easy Crock Pot Creamy Garlic Chicken, letting the sauce soak right in.
- For ultra-smooth mash, use an immersion blender or food processor.
- For extra richness, add another tablespoon of butter before serving.
If you’re craving something fresh and flavorful, this low carb Chicken Bruschetta is one of my favorite easy dinners.
