  2. Cover with water and bring to a boil.
  3. Boil for 12–15 minutes, until very soft.
  4. Drain very well and let it steam dry for 2–3 minutes (this prevents watery mash).
  5. Add butter, cream cheese, sour cream, salt, and pepper.
  6. Mash with a potato masher or blend with an immersion blender until smooth and fluffy.
  7. Taste and adjust salt as needed. Serve warm and enjoy!
