- 6 Tbsp butter, divided
- 8 oz baby bella mushrooms, chopped

- 1 cup chicken broth (or 1 cup water + 1 tsp of my Keto Chicken Bouillon Paste)
- ½ cup heavy whipping cream
- 4 oz cream cheese
- 1 tsp onion & herb seasoning or my Homemade Ranch Seasoning
- 1–2 cups freshly shredded Parmesan cheese
- Salt and pepper, to taste
Instructions
- Preheat oven to 350°F.
- Steam the frozen green beans according to package directions. Drain well and place them into a 9×13 casserole dish.
- In a large skillet over medium heat, melt 3 tablespoons of butter. Add the diced onion and garlic and sauté for 3–4 minutes, until translucent and fragrant.
- Add the chopped mushrooms and cook for 4–6 minutes, stirring occasionally, until most of the liquid has evaporated.
- Pour in the chicken broth and add the remaining 3 tablespoons of butter. Once the butter has melted, stir in the heavy whipping cream and cream cheese.
- Add the onion & herb seasoning, along with salt and pepper to taste. Stir and cook until the cream cheese is fully melted and the sauce is smooth.
- Pour the creamy mushroom sauce over the green beans and gently mix until everything is evenly coated.
- Cover the casserole dish with foil and bake for 20 minutes.
- Remove the foil, sprinkle the top with shredded Parmesan cheese, and return to the oven. Bake uncovered until the cheese is fully melted and lightly golden.
