This Keto Broccoli and Cheddar Soup is rich, creamy, and incredibly comforting — the kind of meal that warms you up fast without knocking you out of ketosis. It’s made with simple ingredients, comes together quickly, and tastes like something you’d order at a restaurant… without the carbs.
I love this soup on busy days when I want something hearty but still nourishing. Using frozen broccoli makes it extra convenient, and the combination of cream cheese and cheddar gives it that classic, velvety texture we all love.
When I’m craving a warm, comforting meal, this cheesy broccoli soup is often on the menu right alongside easy keto mains like my Big Mac Patties.

Ingredients
- 2 LB bag frozen broccoli
- 3 tbsp butter
- 2 garlic cloves, minced (or 1 tsp minced garlic)
- 4 cups chicken broth (or 4 cups water + 4 teaspoons of my Keto Chicken Bouillon Paste)
- 2 cups water
- ¼ tsp thyme
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ½ tsp salt
- ¼ tsp pepper
- 8 oz cream cheese, cubed
- 3 cups shredded cheese (cheddar works best)
- 1 cup heavy whipping cream
Instructions (Stovetop Method)
- In a large pot, melt the butter over medium heat.
- Add the garlic and sauté for 1–2 minutes, just until fragrant (do not brown).
- Pour in the broth and water, then add the broccoli and all seasonings.
- Bring to a gentle simmer and cook for a few minutes until the broccoli softens slightly.
- Using an immersion blender, blend a few large chunks to thicken the soup while keeping texture.
- Optional: You can also roughly chop the broccoli before adding it instead of blending later.
- Add the cubed cream cheese and stir until fully melted.
- Bring the soup back to a light simmer, then add the shredded cheese ½ cup at a time, stirring constantly until smooth before adding more.
- Remove from heat and stir in the heavy whipping cream.
- Taste and adjust seasoning if needed. Serve warm.
Crock Pot Version (Slow Cooker)
This soup adapts beautifully to the crock pot and is perfect for busy days.

- High: 3–4 hours
- Use an immersion blender to blend a few chunks for thickness (optional).
- Add the cubed cream cheese and stir until melted.
- Add the shredded cheese ½ cup at a time, stirring between additions until smooth.
- Stir in the heavy whipping cream.
- Cover and cook an additional 15–20 minutes on low, just until heated through. Do not boil.

Tips & Notes
- Cheese matters: Shred your own cheese using a cheese grater if possible — pre-shredded cheese doesn’t melt as smoothly.
- Thickness control: Blend more or less broccoli depending on how thick you like your soup. You can also add more or less liquid!
- For a richer color: add a couple of sprinkles of turmeric if you’d like.
- For a little crunch on the side: this soup is delicious with my Keto Almond Crackers.
- Extra flavor: A pinch of smoked paprika or mustard powder adds depth without carbs.
- Storage: Keeps well in the fridge for up to 4 days. Reheat gently to avoid separation.
- I love tearing up my Keto Biscuits and dropping them right into this soup for a comforting, hearty bite.
