The chicken is gently simmered right in the broth for maximum flavor, then shredded and returned to the pot for a simple, hearty soup the whole family loves.   1. In a large pot or Dutch oven, add the chicken breasts and pour in the chicken broth. Bring to a gentle boil over medium-high heat.
  2. Reduce heat to a simmer and cook for 15–20 minutes, or until the chicken is fully cooked and tender.
  3. Remove the chicken from the pot and shred it using two forks. Set aside.
  4. Add the chopped onion, celery, zucchini, garlic, garlic powder, salt, and pepper to the broth. Simmer for 10–15 minutes, until the vegetables are tender.
  5. Return the shredded chicken to the pot and simmer for an additional 5 minutes to let the flavors come together.
  6. Taste and adjust seasoning as needed.
  7. Serve warm and top with sliced avocado, if desired.
