Ingredients:
- 2–2½ lbs boneless, skinless chicken breasts
- 8 cups chicken broth (or 8 cups water + 8 teaspoons of my Keto Chicken Bouillon Paste)
- 1 cup chopped zucchini
- 1 cup chopped celery
- 1 medium to large onion, chopped
- 2 garlic cloves, minced or 1 tsp minced garlic
- 1 tsp garlic powder
- Salt & pepper, to taste
- Avocado, for topping (optional)
Instructions
- In a large pot or Dutch oven, add the chicken breasts and pour in the chicken broth. Bring to a gentle boil over medium-high heat.
- Reduce heat to a simmer and cook for 15–20 minutes, or until the chicken is fully cooked and tender.
- Remove the chicken from the pot and shred it using two forks. Set aside.
- Add the chopped onion, celery, zucchini, garlic, garlic powder, salt, and pepper to the broth. Simmer for 10–15 minutes, until the vegetables are tender.
- Return the shredded chicken to the pot and simmer for an additional 5 minutes to let the flavors come together.
- Taste and adjust seasoning as needed.
- Serve warm and top with sliced avocado, if desired.
