Notes & Tips
- Meat drippings vs. bone broth: Ham drippings give a richer, more savory flavor, while bone broth keeps it lighter. Either works beautifully.
- Thickening tip: Sprinkle the gelatin slowly while whisking; this prevents clumps and gives a smooth, glossy texture.
- Make ahead: This gravy can be made a day in advance and reheated gently over low heat. Add a splash of broth if it thickens too much.
- Serving ideas: Perfect over roasted meats, my Mashed Cauliflower, keto stuffing, roasted vegetables or served alongside my Keto Cheesy Biscuits.
- Optional cream: Adding cream makes the gravy extra silky and indulgent but isn’t necessary for keto-friendly versions.
- Gelatin setting: Gelatin will start to thicken as it cools slightly, giving the gravy its silky, glossy texture. It’s best served warm—once it cools completely, it will firm up just as expected.
This rich, keto gravy is easy to make and full of flavor. Whether you’re serving it over roasted meats, mashed cauliflower, or keto stuffing, it’s sure to become a holiday favorite. Give it a try and enjoy every silky, comforting bite!
