Ingredients:
- 2 lbs chicken thighs or breasts
- 1 cup chopped vegetables of your choosing (zucchini, bell peppers, broccoli, or all)
- 2 garlic cloves, minced or 1 tsp minced garlic from a jar.
- 1 medium to large onion, diced
- 1 cup chicken broth (or 1 cup water + 1 tsp of my Keto Chicken Bouillon Paste)
- 3-4 tablespoons of butter
- 1 teaspoon creole seasoning (optional)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt & pepper, to taste
- 1/2 cup shredded cheese (optional, add at the end)
Instructions:
- Place chicken in the crock pot.
- Add chopped vegetables, chicken broth, garlic, garlic powder, paprika, salt, and pepper. Place the butter on top.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- If using, sprinkle shredded cheese on top in the last 10 minutes.
- Serve warm and enjoy!
