Ingredients
- 10 oz frozen riced cauliflower
(or about 2½ cups fresh riced cauliflower) - 1 tbsp olive oil or butter
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 2–3 cups sliced mushrooms
- 2 cups fresh spinach, chopped
(or 1 cup of frozen chopped spinach) - 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
Instructions
- Heat olive oil (or butter) in a large skillet over medium heat.
- Add chopped onion and sauté for 2–3 minutes, until soft.
- Stir in garlic and mushrooms. Cook 4–5 minutes, until mushrooms release their moisture.
- Add frozen cauliflower rice and all seasonings.
- Cook uncovered for 10–15 minutes, stirring occasionally, until the moisture cooks off and the cauliflower looks fluffy (not watery).
- Stir in spinach and cook 1–2 minutes, just until wilted.
- Taste and adjust salt and pepper as needed.
